jvmangia Posted May 21, 2015 Share Posted May 21, 2015 I got home tonight - it's a very cool windy day here in the San Francisco Bay Area, and the house smelled lovely of the brisket that had been cooking all day...The butternut squash on the other hand was a bit overcooked - dare I say mushy? Rather than waste the squash, I took all the squash, and the leftover liquid (homemade bone-broth and the onions, garlic, thyme) and threw them in the food processor. Voila! Butternut Squash soup. A little drizzle of coconut cream on top, and I've got a nice comforting bowl of soup to go with my brisket and salad. Link to comment Share on other sites More sharing options...
