Mayo taste

Sooooooo I made an incredibly beautiful batch of mayo. There is just one minor problem....... Not such a fan of the taste. Has anyone else experienced this nd if so do you become accustomed? I am a big hellmans fan (or was). Made some chicken salad with the homemade mayo and it just didn't taste quite right. As always, insight is welcome!!!

I primarily use my homemade mayo as a base for dressings or in mayo-based salads (like chicken salad, tuna salad, &c) so I season it a lot before I use it and don't notice the specific mayo-y taste.

I make the batch plain and season according to my use.

Curry powder is GREAT (curried chicken salad!!!), herbs de provence, mustard, &c are all great additions!

I made a batch today and used the recipe from Nom Nom Paleo iPad app.

1 hippie chickies egg yolk

1/4 tsp kosher salt

1/4 tsp Dijon mustard ( I use Annie's organic - there's no white wine in it )

1 1/2 tsp of lemon juice

1 tsp white vinegar

3/4 cup of either macadamia oil or avacado oil
