It's classed as an organ meat, but it's very much like a top end grade of meat! Very tender and slow cooks like a dream. I find it very cheap and easy to find. Link to post Share on other sites

It's a piece of muscle that hangs off of the diaphram (hence Hanger steak). My favorite butcher calls it "Butcher Steak". It used to be that only the butchers took it home. Smart butchers.
