It's classed as an organ meat, but it's very much like a top end grade of meat! Very tender and slow cooks like a dream. I find it very cheap and easy to find. Susan W Posted September 5, 2012 Share Posted September 5, 2012 One of my favorites. It's great for lettuce wrapped fajitas. It's not an organ meat though. It's a piece of muscle that hangs off of the diaphram (hence Hanger steak). My favorite butcher calls it "Butcher Steak". It used to be that only the butchers took it home. Smart butchers.
