We live in different cities and want to support each others' journeys, so we figured we'd make a joint log here to share how things are going and what we're eating. So! Today, I (Caroline) had: D1M1: 2 eggs fried in coconut oil, handful of spinach, handful of mushrooms, 1 banana D1M2: An orange and a Tupperware with Mixed greens, turkey lunch meat (I don't think I put enough turkey in!), 1/2 avocado, lemon juice & red vinegar as dressing. I was still a little hungry so I ate some baby carrots, cherries, and a small handful of salted almonds. I am planning to have riced cauliflower, grilled chicken, guacamole & pepers/onions for D1M3 and am PUMPED. It's 3pm now and I feel great! Just a little thirsty and ... yeah kind of hungry. Yep, you should have eaten more veggies Tiffany - infact you should've eaten more in general...!! Eggs, when they are your sole source of protein, should be the number of whole eggs you can hold in one hand, which is 3-4 for most females... Don't let the fruit push the veggies off of your plate - fill up on veggies, proteins & fats first & if you're still hungry then have the fruit... Carol, a salad needs to be HUGE to keep you satiated for 4-5 hrs - try adding some cooked veg in with the raw stuff as it will help keep you fuller for longer. Try adding more protein tomorrow... My boyfriend and I ate cauliflower rice "burrito bowls" with grilled chicken, sauteed peppers & onions, salsa, and guac. SO delicious. I woke up this morning on Day 2 feeling REALLY tired and my neck was really sore (was it just because it was cold here last night?). I also realized my Vitamin D supplements have corn oil and soybean oil (really??) so I will nix those for the rest of the W30. Last night after dinner, I made my own mayo using the recipe from the book (it has a really stong olive oil-y taste due to using Extra Virgin not Light olive oil - but oh well!). I used some of it to make chicken salad with leftover grilled chicken, 1/2 an apple, celery, and some salt/pepper/tumeric. That will be my M2 today with some greens and carrots! (I brought an orange and some almonds just in case I am still hungry like I was yesterday, but hoping I won't need them). I also prepped a Fritatta with 1lb ground turkey (I think this may have been TOO much turkey!), 8 eggs, tons of sliced mushrooms, 1/4 of an onion, and some garlic. I cooked it on the stove over medium in a cast iron pan (after cooking the meat through beforehand) and then stuck it in a 350 oven for like 25 mins. When it was finished, I cut it into 8 slices and wrapped it up for breakfasts this week! SO today after DRAGGING myself out of bed, I had 1 slice of the fritatta with some guacamole on top and some black coffee, but then decided I needed a second slice (also with guac). The fritatta itself was decent, but a little dry! I think next time I'd add some coconut milk to the eggs, or not cook it as long / lower the amount of turkey. It's VERY dreary and cold and rainy here which is just making me feel a little sleepy. Hopefully I start waking up! I have a big meeting in a few hours!! thsellinger Posted June 2, 2015 Share Posted June 2, 2015 For dinner last night I had... leftover chicken breast, green peppers, onions on a bed of lettuce as my "fajita wrap!" No sauce, just spices - salt, pepper, cumin, cayenne and garlic! I was stuffed. Wished I could have eaten earlier though - I feel like city living makes everyone eat late (i.e. 9 pm!) This morning I have two boiled eggs, salmon and fruit with nuts. I forgot my veggies though! Arg! Rough start to the morning! I'm eating a big salad with shrimp for lunch though? carolharrol Posted June 3, 2015 Author Share Posted June 3, 2015 Yesterday (Day 2)'s M2 and M3 were so delicious! I had the chicken salad on greens for lunch and it was amazing. Snack of almonds and carrots at around 4pm and then dinner around 7pm with a NY Strip steak, grilled asparagus + avocado as a puree (to feel fancy) and sliced up banana. I had a La Croix to drink as well to feel even fancier. We cooked the steak in ghee and it was really good! Tasted a bit like cheese to me, honestly. unfortunately, I may have eaten too much at dinner because I just didn't feel great after. I had a strong headache and a bit of a tummy ache and just wanted to go to bed, so after watching the Bachelorette On Demand with my bf (don't judge!) I was asleep by 9:30. This morning (Day 3) I woke up almost an hour AFTER my alarm went off. OOPS! I was just SO tired! But when I peeled myself out of bed, I felt pretty good and made my black coffee, reheated fritatta with salsa on top, and had half an apple with some almond butter. The fritatta is still really dry, so it was a bit difficult to eat...Maybe I can cut it up into small pieces and add sweet potatoes or more egg to it to make it tastier?? Help! I guess there are only 2 more days' worth of fritatta and it TASTES good, just a little hard to eat. I prepped some tuna salad (just 1 can of tuna + homemade mayo) on top of greens for M2 today and packed some carrots and celery sticks with almond butter and hope that tastes delicious. Last night, my boyfriend prepped a curry-rubbed pork roast in the crockpot which smelled pretty yummy - so that's what we'll have for M3 with maybe some baked sweet potatoes and green beans. Yesterday's food was pretty good, but I definitely did NOT pack enough for lunch. I packed a can of tuna mixed with homemade mayo on top of mixed salad greens with some carrots and celery with a bit of almond butter. NOT ENOUGH. I was super hungry by around 3:30 pm and ended up eating an emergency bar (CLIF Kit's Organic Fruit & Nut Cashew bar) from my desk to hold me over until dinner (around 6:30 / 7ish). I guess I will need pretty huge lunches to not get starvinggggg before dinner! Does everyone do this? Do people usually eat lunch later than noon to last longer? I can only wait to eat on certain days because of meetings, etc. But I want to avoid snacking! So. I got home at around 5:45 and my boyfriend had already baked me some sweet potatoes, heated up some green beans with ghee, garlic, and salt&pepper, and heated up some of the curry-rubbed pork roast he had cooked in the crockpot the night before. Talk about service! That meal was pretty delicious and filling and I was set until bedtime (again around 10pm! so sleepy). This morning I woke up at around 7 and prepped my coffee, and microwaved a piece of fritatta (only one today) with a leftover teeny sweet potato. I also ate some proscuitto and put some coconut cream in my coffee for an added fat because I didn't feel like chopping up an avocado. I also put salsa on the fritatta piece. The fritatta was more OK when I only ate one piece, and I REALLY liked the sweet potato/proscuitto combo. Maybe I'll have this same thing tomorrow! Today for M2 I have prepped: -chicken salad (grilled chicken chunks, homemade mayo (about a big spoonful), ~3 chopped celery stalks, 1/2 an apple, a sprinkle of chopped walnuts, splash of dill pickle brine) -mixed salad greens with the chicken salad -carrot sticks (3 whole carrots chopped up) -cherries (less than 1cup? about a big handful) -small handful of almonds Hopefully that will be enough to avoid snacking! Let's see.... Tonight for M3 I think we'll have a repeat of yesterday, if I can get home and pop some more sweet potatoes into the oven before dying of hunger! ladalton Posted June 4, 2015 Share Posted June 4, 2015 Ladies, your meals sound delicious! I also started on June 1, and I am having fun with the different food options. I like to chop cooked sweet potato and make a hash with onions, mushrooms, or whatever. Makes a wonderful accompaniment to eggs for meal 1! Put some cayenne or harissa on it for a little spicy kick, or ras el hanout for a more warm flavor. Also, if you haven't read the book yet, I encourage you to do so. M2 was my homemade chicken salad on greens. I had brought almonds, carrots, and cherries to eat with lunch but I didn't get a chance as I had meetings back-to-back almost all afternoon! By the time it was around 4 and I was back in my office, I ... wasn't hungry! Imagine that. So I waited to eat until dinner. M3 was leftover pork roast with green beans. I put a little splash of sesame oil on the green beans and put some coconut aminos on the pork (it got a little dry reheating) - who knew coconut aminos were so tasty?! Really made the pork taste awesome. We didn't have any sweet potatoes pre-baked, so I had a banana on the side. For my fat portion I had the sesame oil on the green beans and a little bit of coconut cream on top of the pork! Great dinner! TODAY : I had to be at work by 8am and so woke up at 6 (well...I snoozed once so it was really like 6:08). I prepped my piece of fritatta (only 2 pieces left in the fridge, guys! Then I can make more exciting breakfasts) with a teeny sweet potato (OK we really did have this one little one baked last night but I wanted to save it for M1 today), half of an avocado, a slice of proscuitto, and salsa. It looked like a lot of food but I was really hungry and ate it all with some black coffee. I ate M1 a little earlier than usual today, so I am a bit hungry now (11am) but I think I will be ok. Although...we just had a meeting scheduled for noon! So I am debating whether to eat lunch nowish or wait until 1pm so then I can last easier to M3. We are thinking about roasting a whole chicken tonight with lemon and garlic and maybe some thyme. Maybe some zucchini grilled on the side? I am excited! carolharrol Posted June 6, 2015 Author Share Posted June 6, 2015 So! Today is Day SIX! I am feeling pretty good today (but I *think* I might be inching into "kill all the things" territory). Yesterday I was really annoyed with some coworkers and came home annoyed at my BF when he took out the trash (after I asked him to!) but he didn't replace the trash bag in the trashcan! hahah he never remembers to do that, but somehow I expected him to magically do it this time (it's usually my job). Uh oh! I felt better after I ate. We didn't feel like waiting for a baked chicken (that will be tonight now!) so I had leftover grilled chicken breast scrambled with an egg and leftover peppers/onions. I ate salsa and half an avocado on top and it was super tasty! For today (day 6) M1: last two pieces of frittata, salsa, 1/2 avocado, 2 slices prosciutto M2: can of tuna + homemade mayo, salad greens, coconut aminos (really tasty in the tuna salad, surprisingly!), some celery, almond butter, and a banana. I am still working on the banana, celery & almond butter- not sure I needed all of this. I felt kind of ... tempted to cheat earlier which hasn't happened until just now! My boyfriend is at work and I looked in the pantry to get the can of tuna and all of these PRETZELS an CEREALS were calling to me (since my BF isn't doing W30, we didn't throw that stuff away...but maybe we should have?) I stayed strong and then prepped all the extra stuff for lunch (banana, celery, almond butter). The idea has passed! Hope I stay strong EVERY time... Last night I had a dream that I was at a bar with friends and ordered a beer and drank it before remembering I was on Whole 30! I woke up really sad and guilty and thought about how I had to start over...then I remembered it was just a dream! So weird. I didn't think it would really happen! Hopefully we'll bake this chicken tonight with some grilled zucchini (or zucchini zoodles!) and go to the store either tonight or tomorrow to replenish our eggs, avocados, chicken breast, and STEAK supply. We made it by just basting the chicken in lemon/lime juice and a little garlic/salt/pepper and putting two small lemons inside the cavity. It was super tasty! Served over some zoodles with olive oil on them. I left the zoodles raw and then just spooned some hot broth on them to soften them up. SO good. I am almost out of food! I woke up at 6am this morning (TOTALLY unlike me!) feeling pretty great, so I stayed awake while my boyfriend and the dog slept. I made myself a plate of chicken lunch meat, a little leftover chicken from last night, and some prosciutto with some homemade mayo and an apple. I didn't want to wake them so I didn't get any veggies microwaved (all I have left is frozen veggies! well...and celery sticks but I didn't want them at 6am!) It's 11AM and I'm kinda hungry already, but we have to go to the store before I can eat much besides celery sticks and almond butter, so I might eat some of that as a snack before we head to Trader Joe's. carolharrol Posted June 8, 2015 Author Share Posted June 8, 2015 DAY EIGHT! We are about 25% finished if you think of today as being 2/3 over! (WHICH I DO!) So cool. I had to be at work by about 7:45 today for an 8 am meeting...then had another meeting from 9-10. And another from 10-1:30 and another from 2-4:30. Ay yi yi! The 10-1:30 one - I had a quick break for lunch and scarfed down my M2. But first! I will recap D7M2 and D7M3 and D8M1. D7M2: I had the snack I mentioned - celery and almond butter, and also some carrot sticks I dug up and a compliant beef jerky stick. Then we went to Trader Joe's and Whole Foods and STOCKED UP. So many meats and veggies! D7M3: We ate dinner at like 4pm because we were both really hungry! Made some beef burgers with sauteed mushrooms and onions in a lettuce bun, AND a compliant hotdog, AND a piece of compliant bacon. I made a bunch of coleslaw with pre-shredded cabbage & "broccoli slaw" mix from TJ - I used my homemade mayo + lemon juice for the sauce. Pretty tasty! Got really full from all of this food but it was so good. Also - I made homemade ketchup but only had red wine vinegar instead of apple cider vinegar......... not a great choice. Still edible but has a strong red wine vinegar taste! I like it, just not KETCHUP ketchup. D8M1: I was tired and cranky this morning - but made a compliant chicken/apple sausage and 1 egg scrambled up - SO GOOD. I had coleslaw on the side, but it was just SO MUCH CHEWING I got tired of it! Black coffee too. I wanted to drink 2 cups - but didn't have time before I ran out the door! D8M2: I made a combo egg & chicken & celery salad with homemade mayo and put it on top of salad greens. That was all I was able to eat before heading back to my meeting, but I had brought carrot sticks, celery & almond butter & cherries - but didn't eat it! I am eating some carrots and almond butter now (5pm) just bc I am hungry but I shouldn't eat much because I am sure we will eat soon after I get home! (around 6) Today was just a tiring day - cramps, headache, tired, cranky..... but I am looking forward to dinner of yesterday's leftovers and maybe watching the Bachelorette! I just woke up NOT wanting to take time to prep M1 and I fell asleep during the Bachelorette last night (aka before 10pm at some point!) and never prepped my M2...so I had to do that too...and I was nottttt into it. I just felt burdened. I thought about just buying a salad from our cafeteria, but it's a buffet, and I have no idea what is on the chicken. BUT I powered through. D9M1: -chicken / apple sausage, sauteed spinach, half avocado D9M2: -salad greens with deli chicken lunchmeat slices (compliant!), half an avocado, lemon juice, cherries, almonds Tonight I might make some meatballs and "spaghetti" of zoodles with marinara. It wasn't a huge deal, but felt prettttyy strange. I have felt vertigo before during migraines, but without a headache right now, not really sure what's bringing it on - especially right upon waking up! Last night M3 - the "chicken" meatballs (turkey) from the W30 book were really great! My boyfriend loved them. I used Trader Joe's canned marinara + some spices as the sauce, and all overtop zoodles. I felt like I needed some starch too, so I had a banana with almond butter on the side. Today! M1 = chicken & apple sausage, sauteed spinach (in ghee), half an avocado. There were only 4 of us there and he was literally handing them to each person and he got to me last and I tried to politely decline "Oh, no thank you! Looks great though" and it felt like an anti-drug peer-pressure PSA where everyone is like "Come on! Just try it! Just once! You'll like it!" and I just had to keep saying "No thanks, guys...really." I didn't explain why not because it felt a little too...private? For that kind of meeting. I didn't want to seem like an a-hole though.... After successfully declining (someone else ate mine), I thought about all the times previously I definitely would NOT have declined and ate it whether I wanted it or not. GLAD I STAYED STRONG! D10M3: I came home to my boyfriend reheating some baked sweet potatoes, steaming broccoli, and grilling some bbq pork (I had made Whole30 bbq sauce the day before so he could do this). It was so nice! I ate all of that with a few strawberries and it was a really satisfying meal. Day11M1 was a chicken/apple sausage, wilted spinach, and some coconut cream in my coffee. carolharrol Posted June 12, 2015 Author Share Posted June 12, 2015 Today is Day TWELVE. My D11M2 yesterday was delicious! leftover pork on coleslaw. Orange + almonds. D11M3: leftover meatballs on a huge pile of sauteed spinach with marinara and avocado D12M1 - I cooked 3 eggs, scrambled with a bit of coconut milk mixed in - so fluffy! I also sauteed some grape tomatoes and sliced mushrooms in a pan and made my usual black coffee. BUT I could barely finish half! I saved the other half maybe for breakfast tomorrow, but I am not sure why I was so UNhungry this morning. I ate at maybe 7:30 and it's 10:15am now and I am starting to feel a little hungry. Debating whether to eat a morning snack (packed a teeny baked sweet potato with some almonds) or waiting until lunch to eat. Or I could wait until about 11 and eat lunch?? DECISIONS. I had a really annoying headache (maybe a baby migraine) last night. I felt really nauseated and headachy from like 1pm until I went to bed at like 9:30. I am not sure what these headaches stem from! I have had terrible migraines for most of my life, and stopped taking a seizure inhibiting medication in late March/early April. I was on that medication daily for about 1.5 - 2 years and, while it made my migraines much less frequent, had terrible side effects (slow memory recall, tingling/pain in my hands and face and feet, and while it is used for weight LOSS with some people - I GAINED about 20 pounds during that time...not sure if it's from that medication or just life). So, while I'm glad I am off the medication, I am SAD I am starting to get headaches so often again. Is it from my glasses being the wrong prescription? Maybe, I haven't gotten my eyes checked in 2 years. Is it from lack of bread & dairy & soy & legumes? I wouldn't think so, right??? I am hoping for some improvement as I finish the Whole30- but trying not to get my hopes up. I just don't want to start taking more pills every day. carolharrol Posted June 15, 2015 Author Share Posted June 15, 2015 Day 15 is here! ALMOST halfway! This past weekend was the first time eating anything NOT prepped in my kitchen. On Saturday morning we headed down to NYC for my sister's baby shower. I had hard boiled eggs, almonds, and an apple in the car for breakfast. At the party, there was plain fruit (pineapple, melon, berries) and some marinated shrimp (cooked shrimp in vegetable oil, onions, garlic, lime juice). So I ate those and not all the cake, muffins, croissant sandwiches, and mimosas. I also had an Izze soda - which is "no added sugar" fruit juice with carbonation - not the healthiest beverage, but it helped me feel celebratory and not tempted by champagne! I know the vegetable oil on the shrimp isn't ideal, but it was really all I could do. After the party, I had a Lara bar and some more almonds. For dinner, everyone ordered PIZZA. My one true love. I stayed strong and got a plain salad with no dressing and when it arrived, I put some more shrimp on it and some Texas Pete hot sauce (compliant!). Everyone was asking why I wasn't eating cake or pizza....and I finally explained what I was doing and everyone was like "well you could just have a LITTLE cake..." etc. So, not a whole lot of support, but I stayed strong! In the morning, we went out to breakfast at a diner, and I had steak (grilled) and eggs (poached) with some fruit on the side and some black iced coffee. It was delicious, but I suspect there may have been some oil or butter on the steak... hopefully not? I really couldn't tell. SO. I feel proud and healthy and excited to keep going. This shower was the one thing during the 30 days that I was really nervous about, but I think I stayed true to the plan and can keep going! carolharrol Posted June 18, 2015 Author Share Posted June 18, 2015 It's becoming harder and harder to keep up with my journal! Work is picking up speed and I feel like I am in meetings for at least half of every day! Crazy. BUT - I am doing great with Whole 30. It was a little rough for a few days last week with tons of headaches and being really tired - but this week I feel like I have turned a corner. I feel more energy and more in control. I wish my clothes were starting to feel a bit looser...but I think I am noticing a difference in body composition! My skin feels softer and clearer as well - my boyfriend commented on how I was "glowing!" so that's nice. I have had a few cravings and last night I had a dream where my boyfriend and I decided to elope, so naturally, I walked into a bar and ordered a glass of red wine (what? red wine at a bar?? haha not my style) and held it for awhile while we walked to people's houses and invited them to our wedding that afternoon. Then I felt bad about holding the wine because I was on Whole30, so I put it in the fridge. I woke up thinking "omg did I have a sip of that wine??" but then I remembered...I'm not married and I didn't drink any wine! PHEW. Today I made a 2-egg omelette with some smoked salmon & sauteed mushrooms, onions, leftover grilled asparagus, and cherry tomatoes. I added a bit of mayo in the omelette for a bit of added fat - turned out really yummy! I have leftover Thai red curry for lunch that I made last night - shrimp, sweet peppers, onions, green beans, red curry paste, garlic, and coconut milk over cauliflower rice. SO tasty. Last night we ate this for dinner while watching the first episode of ORANGE IS THE NEW BLACK Season 3. It's such a good show. I was asleep by just after 10 / 10:30 and was up around 6:45. carolharrol Posted June 19, 2015 Author Share Posted June 19, 2015 Last night I accidentally fell asleep with the TV on and no sleep timer at around 10:30. I woke up at 2AM from the TV noise and was wide awake! For only about 15 mins... But I woke up today at 7AM instead of 6, so I didn't get to work until 9 instead of 8. No biggie, no meeting or anything, but I felt groggy and tired this morning BUT TGIF!!! Last night, my boyfriend made me an omelet for dinner (and bacon! and italian sausage! and spinach! and salsa!) and this morning I had 3 fried eggs with 1/2 a small avocado and about half a bag of baby spinach sauteed. I am surprisingly...NOT sick of eggs yet. Today for lunch I have leftover Thai red curry with shrimp and veggies, like I had yesterday. I am not sure what we'll have tonight! We bought some pork shoulder for making kalua pork this weekend -- so psyched to try it! I am now able to put my ring that I usually wear on my right ring finger (because it used to fit no other finger) onto the middle finger of my left hand! Kind of exciting. My hands do swell up when I'm hot though, so when I get hot walking to the T, it gets a LITTLE tight on my middle finger. Hopefully it will fit comfortably on there soon! Or even my right hand middle finger! Not sure why it's a bigger finger, as I'm left-handed, but oh well! NSV! I think my seasonal allergies have gotten better as well. I sneezed this morning when I got to work, and thought to myself "Hmm...first time I've sneezed in awhile!!" I didn't even react too badly (just moderately itchy eyes) when I visited my sister's apartment with 2 cats last weekend. Granted, she had cleaned up a lot for our visit, but usually my eyes, throat, and nose bother me at her place. NSV #2!
