Day 1

mushroom omlette (cooked in coconut oil) with a whole baby avocado

Stretch, shape & tone class

Salmon fillet with salad, lemon & olive oil dressing, Apple

Jumbo prawn stir-fry with courgetti

Hot water with lemon, herbal tea, coffee with almond milk, 1l water.....

Day 2

Spring onion & spinach scrambled eggs with half an avocado

Walked to/from gym, pilates class

Smoked mackerel salad & homemade Mayo, wedge of melon

Chicken breast stuffed with spinach & sundried tomatoes & butternut squash "fries", half an apple (other half was for a recipe) strawberries

Enjoying the food but I don't think I've got the mindful eating thing yet, pretty much bolted my dinner down. Will try for better tomorrow...

Day 3

Scrambled eggs with avocado

Chicken liver mousse (Hemsley + Hemsley recipe, used ghee instead of butter) on celery sticks and cucumber slices with salad

Cycled to/from gym, core class

Homemade fish burgers (Salmon, cod & smoked haddock, that spices), green beans and new potatoes with lemon & olive oil.

Black coffee, 2 green teas, 1l water

Day 4

Scrambled eggs, mushrooms & half an avocado

Pilates

Chicken liver mousse, couple of celery sticks, sugar snap peas, olives

Apple & nuts

Beef burger in portobello mushroom bun, grilled red & yellow peppers & roasted butternut squash wedges & Mayo

Hot water with lemon, coffee with almond milk, couple of herbal teas 1l water

Small, quick lunch as we were going out. Took the apple & nuts with me and had them when we went to a coffee shop (I had a herbal tea).

Day 5

Same breakfast as yesterday, scrambled eggs, mushrooms & half an avocado

Smoked Mackerel salad, 2 melon slices..

Chicken cacciatore, steamed spring greens and baby new potatoes.

Hot water with lemon, coffee with almond milk, several herbal teas, 1l water, almond milk latte.

Day 6

Frittata (spinach, red onion, potatoes) and half an avocado

Almond milk latte

Core class

Salmon fillet with spinach salad and salsa

Apple with pumpkin seed butter

Turkey skewer with Thai laksa (adapted from Jamie Oliver's recipe)

Couple of herbal teas, not quite a litre of water...

Day 7

Scrambled eggs, avocado and salsa

2 coffees with coconut milk

Leftover laksa with prawns, strawberries & melon

Green tea

Slow-cooked beef stew and cauliflower. Pear

2l water

Feel slimmer, had to resist the urge to jump on the scales.

One week done!
