If this is what I have to look forward to with the other recipes in this book, I am one happy girl! :D This dish was so tasty and to top that off, it was so simple to prepare. We ate all the veggies out of it last night, so tonight I'm making lettuce wraps out of the meat.

I agree about the leftovers. I'm going to stuff the leftovers into zucchini boats next time and bake them. My family doesn't like leftovers really, so I try to do something different with them so they don't think of them as leftover.

Okay, i read this recipe last night. Now I'm putting it on the list for dinners next week.

Saguaromom, the recipe is in the book, It Starts with Food. It is one of the first tables in when you get to the meal map section.
