OneDay
Can anyone help me work out if this is w30 compliant? It's what I use normally for vegetable stock, it's vegan/gluten/yeast/dairy free. I'm in the UK by the way and every other stock powder I looked up in the supermarket had added sugar :-( Hydrolysed vegetable protein, potato starch, sea salt, Palm oil, vegetables 10% (celery, onions, carrots, leeks), maltodextrine, spices (turmeric, white pepper, garlic, mace, nutmeg), parsley, lovage. What is maltodextrine? If it's not compliant does anyone know any suitable UK stock powders/cubes/etc?
missmary
maltodextrine is sugar, so this is a no-go. sorry.
OneDay
Ah rubbish! I've been sick today as a side effect of some medication, want to make some soup tonight. Looks like it'll be quite bland!!

jmcbn
This one is compliant if you have a waitrose close by. Also, it's easy enough to make your own.Hope you're feeling better soon.
Moderators Tom Denham Posted June 5, 2015 Moderators Share Posted June 5, 2015 Your great grandmother would never have considered using a powder to make stock. You make stock with old veggies that are near spoiling or tough parts of veggies like stalks or ends. You honestly don't need something that comes in a package to make soup. OneDay
My great grandmother also didn't work 10 hour shifts for 12 days straight without the option of going home when you're sick! I'm well aware of how to make stock, thankyou. However I live in the modern world and sometimes we need shortcuts. Sorry Tom, I don't mean to sound harsh, I know you're a regular poster here but your reply just comes across as condescending and rude to me, I wasn't asking about how to make homemade stock, I was asking about a particular product. Anyway the result has actually been pretty good, have made a spiced butternut squash soup with heaps of garlic and ginger, and a bunch of other spices, and just used 50/50 water/coconut milk to cook it in. A few hardboiled eggs and a bit of ham on the side for protein. Stomach settling nicely :-)

OneDay
Missmary thanks. I put all the spices (I think it was cardamom, cumin, cinnamon, clove and white pepper) ground and in with the onions, garlic and ginger to cook down first, then added the peeled & cubed butternut squash on top, once it was coated in the spices cover everything with 50/50 water/coconut milk and simmer until the squash is cooked, then blitz in the food processor until it's soup. Usually I'd throw in some cooked/can black beans at the end, obviously that's out for w30! Would also usually use veggie stock rather than water/coconut milk and swirl in a little soya cream at the end. But the w30 tweaks worked pretty well. MeGA Experienced moderator or not, Tom didn't answer the questions I'd asked- two other kind people already had- and posted in a very belittling way, knowing nothing about me, my background, my situation or my great-grandmother :-) Yes, we are all in this together, so especially if someone is an experienced moderator I'm quite surprised they can be so off-hand to people. I've got two extra portions of soup for next week's lunches now too. Might add some 'bits' to one in place of black beans but not sure what yet!
