There are different varieties and they are called different things, but technically, yams are a huge root found in Africa and are not commonly available elsewhere. Food-wise, there are some differences in texture, flavor, level of sweetness, etc., but like ultrarunnergirl said, they're all compliant. There are also lots of sweet potato varities to try out and experiment with. When I was eliminating nightshades and couldn't have white potatoes, I discovered jersey yams.
