Firefrog Posted June 22, 2015 Share Posted June 22, 2015 OK, so I wanted something hearty and spicy for lunch today, so last night I whipped up some chili. Mouth-gasm! (is that allowed?) 1 1/2 lb ground beef (grass fed, locally farmed) 1 can of diced tomatoes and chilies (checked the label, no sugar added so should be safe) 1 red onion 1 yellow pepper 10-12 button mushrooms, fresh 1 large carrot, sliced Cayenne pepper Minced garlic Salt Pepper Paprika Dark baking cocoa powder, no sugar added 1 TBS coconut oil Browned the ground beef, chopped all the veg and added those in along with the seasonings and coconut oil. I like my stuff a bit on the spicy side, so flavor to taste. Seemed a little "dry" so I added in 1/2 C water. Simmered for 30 minutes or until the vegetables just started to lose firmness, not over done, with a little snap to them. Then packed up for lunch today.
