Dinner Tonight?

I roasted a whole chicken. I haven't done this in a while but it was so good. I made a mixture of olive oil, salt, pepper, onion powder, garlic powder, paprika, and an italian herb blend. I rubbed that all over and inside the bird and roasted at 425 for about 90 mins(for a 6 lb bird). The yummiest part was the brussels sprouts that I added to the pan halfway through cooking. They soaked up all the flavorful juices. It's amazing sometimes how a simple meal, simply prepared can taste so good. I love that. Oh, and now I have the carcass in a crock pot with some water ready to make some broth overnight. Nothing's going to waste on this chicken!

I LOVE a good roasted chicken. Just took a pastured chicken out of the freezer to have tomorrow night after reading your post. :)

I am having a giganto shrimp salad. I bought a huge bag of frozen, raw Key West shrimp. I defrosted them today and cooked them with just Old Bay seasoning in my NuWave oven. Then let them cool and mixed them with some homemade mayo. I'll plop them on a big bed of greens, cherry tomatoes from my garden, cucumbers and celery after I toss it with the Avocado dressing from ISWF. It's 90 degrees here and won't cool off until after dark, so a nice cool salad sounds good.

I took a chicken out of the freezer after reading your post too! Sounds so good and it's going to be chilly here tomorrow so nice and comforting as well!

For dinner tonight I had roasted delicata squash, a green salad and a grilled hatch green chile burger...

Oh shrimp salad sounds good! Maybe because I have a bag in the freezer but don't have any chickens waiting for me there:(

I had eggs and pork bellies with sweet potatoes and spinach. This is my staple breakfast but didn't have it for breakfast today so felt like it for dinner:)

Off to defrost shrimp!
