Veggie options and tahini

I am totally hogging this forum today, but a couple more questions.

 

1) Some of my favorite veggies (cucumbers, green beans, eggplants, mushrooms) are not on the "best choices" list which I assume means they're not so nutrient-dense, or is there another reason? Should I worry about this at all or is that the train to crazytown?

 

2) I will eat almost any vegetable if it's dipped or doused in tahini dressing. Should I limit that, because it's sesame?

Haha, no worries.  I would recommend you limit the tahini somewhat.  It's a source of fat, yes, but it's also imbalanced in it's Omega profile and being a seed based thing, it can be hard on your stomach.

 

You might consider trying out some different cooking methods, roasting a vast variety of veggies in some fat with some salt, pepper and garlic over high heat turns them into something out of this world, no sauce required!

 

Don't worry about your favourites not being "best" choices, just make sure you are getting a wide variety of veggies and you'll be fine.

I'm three weeks in and just starting making this eggplant hummus with tahini. I'm already addicted to it. Still has the tahini taste but you're also getting another veggie in. I've been dipping bell peppers in it.
