Jessica Posted September 7, 2012 Share Posted September 7, 2012 I've gotten two large eggplants in my last three CSAs and I'm running out of ideas for what to do with them. So far I've roasted them, made a Whole30 compliant rollatini-type dish, and one lasagna-type dish (no pasta, but it had cheese - for the BF). I'm not a big fan of baba ganoush. Moderators Tom Denham Posted September 7, 2012 Moderators Share Posted September 7, 2012 When tomatoes are plentiful, I stew a bunch of tomatoes a big onion, a jalapeno pepper and some spices. You can add chunks of eggplant to make it a vegetable stew. The eggplant functions more like veggie filler and does little or nothing to the taste. I ended up roasting mine with butternut squash, olive oil and spices. I found the eggplant to itch my tongue so I'm on to other veggies for now.
