Prosciutto?

Thanks everyone! I haven't bought any recently so I haven't checked the labels. Nice to know that it is almost always just pork and salt. Seems everything else I've been buying I've found "ingredients" that I had no idea would be there, so I wanted to ask.

I think I have seen prosciutto with some bad stuff in it. Sugar etc. I also think it won't be too hard to find the pork and salt version and I am pretty sure I have seen it at Trader Joes.

If it has anything other than pork and salt, legally it is not prosciutto.

Actually, that could be true when sourcing prosciutto from Parma or other regions in Italy, but I found it with Nitrates or Nitrites (I forget which) and they are not on my personal Whole30 or any other time list. I'm super picky about such things though.

I got some proscuitto from TJs last week and it was just pork and salt. :)

Just bought some yesterday. :) No ickiness. Going to crisp it up in ghee and sprinkle it on a salad.

I was lazy one day (every day) and microwaved the TJ's prosciutto to see if I could crisp it up for a salad. It worked if anyone wants to try it. Just let it sizzle up and then cool. It crumbled beautifully. I'm sure it's great with ghee but this was a fast no-cleanup alternative.

Is prosciutto considered a fat or a protein?

You can consider it a fat or a condiment for the purposes of Whole30. Reason being; you need at least a palm of protein (length, width, thickness) and you are unlikely to get that if you are using prosciutto.
