First, butter is not permitted on Whole30 so frying those ingredients in a "pat of butter" isn't compliant. Second, compliant vanilla almond milk is probably about as realistic as unicorns pooping rainbows. Finally, maybe she can't ever eat a real pancake again. But during the time that she is on Whole30 (if she actually is), she cannot eat a real pancake or this apple/egg/almond milk version. It's only 30 days. Would that make a difference? The Hartwigs specifically call out pancakes as "not okay" while on Whole30 and go on to say that it doesn't matter what your personal relationship is with pancakes. They're out no matter who you are or how far removed you think you are from pancake lust. Given that this is labeled as "apple pie omelet," it seems that the point of this dish is to still scratch the itch for dessert. To me, that says that you're still feeding your sugar dragon.
