Eating too few veggies

Hi all - I'm on day 8 and I know I'm nowhere near the amount of vegetables the program recommends. I'm sure I eat too much protein and fruit. Definitely feel positive effects from the program though because I've only eaten compliant foods, just not the 1-3 cups per meal. I like lettuce, cauliflower and broccoli but that's about all I've included in my Whole30. What are some tried and true ways to incorporate vegetables and your go to recipes?

Stop eating fruit at all. Go to the store and buy a selection of root veggies and roast them. Look through the Well Fed and Well Fed 2 cookbooks and prepare a variety of veggies using recipes you find there as a guide.
