I'm planning a lazy version of moussaka for the eggplant in my crisper or maybe just a layered Italian-style bake with sliced eggplant, zucchini, tomato sauce, and ground beef. But both work (I try to find the smallest globe I can). Slice it thin. I cook them on a silpat mat. Broil on low for 10ish minutes until they brown. Flip them and then do the same.
