Curry question

Hi All, 

 

I just made the curry sauce from the new book and it was really good!  It was definitely better the second day, the flavors really blossomed.  I was wondering if anyone else has made it and frozen it?  I am starting a new job and need to think of meals that I can freeze and have ready to just heat up or through in the crockpot for quick weeknight meals.

I haven't made that particular curry recipe but I have made many curries and frozen pretty much all of them. In fact I freeze a portion of pretty much everything I make for emergencies - I'd say it'd be fine.

Mmm nope haven't tried that one yet but I love curry recipes and would think they would freeze fine! My only concern would be the coconut milk (assuming that is in there....) getting funky on the re-heat but I think if warmed enough and stirred it would be like normal or at least taste the same!
