It was definitely better the second day, the flavors really blossomed. I was wondering if anyone else has made it and frozen it? I am starting a new job and need to think of meals that I can freeze and have ready to just heat up or through in the crockpot for quick weeknight meals. Thanks! edgymama Posted July 20, 2015 Share Posted July 20, 2015 Mmm nope haven't tried that one yet but I love curry recipes and would think they would freeze fine! My only concern would be the coconut milk (assuming that is in there....) getting funky on the re-heat but I think if warmed enough and stirred it would be like normal or at least taste the same!
