Need suggestion for marinade - pork tenderloin

I like to rub mine with garam masala, salt and pepper. Pre-whole-30, I had this with my brother's homemade mango pepper chutney, but it's loaded with sugar, so it's unfortunately out. I think the garam masala rubbed pork is delicious as-is, but if you want a topping, I just found this "apple and onion confit" recipe which looks delicious:

4 tablespoons butter (of course, we W30-ers would use clarified)

1 super large or 2 small/medium pink lady apples, cored and thinly sliced to about 1/8 inch

2 large sweet onions, thinly sliced

1 bay leaf

white pepper

couple pinches kosher salt

1/8 or so teaspoon garam masala

couple pinches ground cinnamon

large pinch dried thyme

Splash of cider vinegar

Add the butter to a heavy bottomed dutch oven and heat over medium heat. Add the apples, onions, bay leaf, white pepper, salt, garam masala, cinnamon, and thyme. Saute, stirring often for ten minutes. Reduce the heat to low/medium (or low if it's sizzling too much) and put the lid on to let simmer for 35 minutes, stirring occasionally. At end, add a splash of apple cider vinegar and stir in. Simmer another 5 minutes before stirring again.
