Garden over run by cucumbers!

And we already have 4 jars of pickles...

 

Anyone have any cool recipes for cucumbers?  We've got the English (long, green ones) and Kirby (pickling).

I also like to just take the english cucumbers and slice up, sprinkle with salt and have it alongside breakfast or lunch. Very good too with sliced green onions or slivers of red onion.

Chop them up in place of celery and add to tuna or chicken salad. I've seen a lot of folks who pull out the seeds from a cucumber to make a well and then fill the cucumber "boats" with a protein of choice for easy finger food. They're also a good vehicle for pate.

 

You can also give these Green salad bites a try and omit the feta. The lemon oregano dressing is good. If you're just making this at home, I'd say skip the tooth picks and just toss everything in a bowl together. Or you could try adding cubes of chicken in place of the feta.

Pickles.  Super complicated.  Only to be attempted by semi-professional chefs.

 

Thinly slice kirby cucumbers.

Place in a jar.

Sprinkle 1-2 tsp of salt over them.

Put in a handful of fresh dill.

Pour in 1/2 c vinegar. 

Shake jar.

 

Keep in fridge.

 

We've added bay leaves, mustard seeds, sugar (1 tsp) - I admit I never taste much of a difference.  I can't eat garlic but a few cloves of that would be good too.

So, totally random, but yesterday I cut up one of our English cucs, cut up a grapefruit, but some Himalayan salt on and then drizzled olive oil and a splash of balsamic.  Surprisingly good - kind of just an alternative to lettuce I guess :)  My neighbors may be sad though - they have been getting a pile on their doorstep each morning but now I may keep them!
