I think I had a weird reaction to beef do I have to start over?

I was actually already feeling much better after just 6 days on the plan.  Probably because I am allergic to cow milk products and dropping that had me breathing easier.  Then on Day 6 I had ground beef for the first time.  It was cooked with just salt, pepper, and organic herbs from my garden.  That night I was extremely gassy and congested.  I had not eaten anything off plan and that was the only different I had from what I had been eating the few days before.

I have had strange reactions to beef in the past and went off it for 2 years, but had been eating it for the last year without incident.  We had thought it was related to a camping trip I went on thinking I had been bitten by a tick.

Anyway, since I had the incident of inflammation just a week into the program, do I have to start my 30 days over again?  Or do I just eliminate beef and keep going?

No need to start over because of a recation, no.

What else have you been eating over the last few days though? Perhaps the gas & congestion was due to a build up of something else in your system. Have you been eating a lot of raw veg? Or cruciferous veg? Or raw crucifeorus veg?? Or even a lot of nuts and nut butters? All of these things can contribute to digetsive distress.

If you'd like to list a few days worth of your food/liquid intake we can take a look and see if something else might have been the problem...

Breakfast is usually a Fritata involving onion mushroom, whatever peppers I harvested from the garden (usually banana) a few cherry tomatoes and fresh herbs from the garden, usually basil and oregano.

Lunch lunch has been Friday was chicken and a kale avocado and lemon salad, Thursday was tuna salad that had onion and banana peppers as romaine wraps with some fresh picked figs, the day before that was spinach salad topped with ham almond slivers and balsamic vinegar and oil
 

Friday Dinner was lemon pepper chicken and the Kale avocado and lemon salad and some fruit (small bits of cantaloupe, kiwi, and raspberries), the day before that was the same thing, and Wednesday dinner was the Tuna salad wrap again with a side of cherries.

 

Monday and Tuesday were very similar, but instead of Tuna on lettuce wraps and Ham on spinach Salad it was the pork Carnitas.  And I usually had cherries on the side.

Ok, first off just check that your ham is compliant as many have sugar added during the curing process.

Food wise I'm seeing a lot of peppers, onions &raw veg in general. Your problems could be arising from the cumulative effect of those so you might want to cut back on the raw veg for a few days, replacing with cooked veg, and see if your symptoms don't subside.

If there's no improvement I'd say then eliminate the beef & take it from there.

What's your liquid intake like? Are you drinking a half ounce of water per pound of body weight? Are you drinking a lot of seltzer by any chance? Or a lot of ice cold water?

The ham was compliant.  I spent a great deal of time in the local whole foods going through the deli meats looking for one that was, it was the only package I found that was.  

I will find someone to give peppers to as the garden is producing like crazy.  I hate cooking during the summer.  We have temperatures at over 100 degrees every day.  I guess I can throw some veggies in the crock pot and it won't heat up the house.

I do drink lots of water, it is hot here in Texas.  But I hate ice, so it is usually just filtered tap water or straight tap water. I don't drink anything fizzy as I am on topomax for migraines and it makes any fizzy drinks taste like cleaning chemicals.
