LauraPerry Posted August 5, 2015 Share Posted August 5, 2015 My husband and I are doing our first whole30. Today is day 16 and I have questions on potatoes. It looks like potatoes were initially a no go on the whole30 but now they seem to be ok. The book I bought as well as the shopping list says all potatoes are ok. So does that mean we can make a potato salad using potatoes, hard boiled eggs, pickles, bacon, whole30 mayo, and mustard? Yes I have read the labels for the bacon, pickles and mustard and made sure they were all compliant. If someone could please help i would appreciate it. SpinSpin Posted August 5, 2015 Share Posted August 5, 2015 I did a potato salad for a friend of mine who is allergic to nightshades and what I did was bake some of the white sweet potatoes, peeled them when cool enough to handle and then tossed them in a vinaigrette of extra virgin olive oil, apple cider vinegar and italian herbs. I let it chill, tossing occasionally. I then mixed in thinly sliced green onions, pickles, compliant dijon mustard and whole30 mayo. It was a bit sweeter (obviously!) than regular potato salad, but it was a nice change up and good with ribs and hamburgers. Link to comment Share on other sites More sharing options...
