Zyriel
I'm entertaining on Wednesday and making Curry Goat (details below). Looking for ideas for a side to put with it. I suppose I could/should do cauliflower rice. But I also want something more side-like. Hmmm, now that I'm reading it, maybe carrots of some kind? I feel like carrots would go good inside it even. Curry Goat includes: Goat Meat Chicken Stock Onion Garlic Coconut Milk (just a bit of it) White Sweet Potato Cooking fat salt & Pepper
kruddock
Green beans might be good or spinach?
Zyriel
Green beans might be good or spinach? Do you think wilted spinach or raw?
Hannlib
I had pak choi and spinach wilted with some garlic and ginger tonight with a curry.
JenX
I'd do some wilted heartier green like kale or chard. with garlic for sure. Maybe with some pine nuts for richness?
Munkers
If you choose to do a cooked side like cauli-rice, it might be nice to also have a cold or room-temp side like a mixed salad or something like casablanca carrots or bellydance beet salad from Melissa Joulwan. Britishgal
Broccoli...brilliant with curries...add some flaked almonds and its veggie nirvana I love veg...can you tell?
kruddock
For the spinach, you could do a palak paneer style without the cheese, of course, then maybe add some other veggies for pop and some pine nuts? Sounds interesting, maybe I'll try that myself, hmmm...
Zyriel
Sounds like something dark green is the general consensus. I have spinach, beet greens AND broccoli on hand so the world is my oyster. AAAnd, I do have pine nuts too! Thank you guys. I'm going to take a peak at the carrot and beet links too (which I have both of). It's like my fridge is a cornucopia right now.
J9er
I'm with munkers, the cauli rice would be my choice.

Occasionally I'll eat saag paneer in a restuarant. When I'm making it at home, I add diced chicken for a main meal or diced potatoes for a side. Or just forget the add-ins and revel in the glorious spinach. This is my go-to recipe. Nix the tofu, obviously.
