Regardless of what it is, you can probably cut the greens into bite-size pieces and wilt them in a deep skillet or pan with olive oil and a little salt, garlic powder, and apple cider vinegar to get a nice meal. I've wilted all kinds of greens and enjoyed them wilted. Strong greens need a little apple cider or balsamic vinegar to adjust them, while milder greens like spinach don't.
