Salmon patty variations question

We love the Salmon Patty receipe in ISWF. I am making a triple batch today for the freezer. I would like to use up some coconut flour. I was thinking of doing half almond/half coconut.

Has anyone tried this?

I would also like to add some extra veggies, maybe some chopped spinach.

Since I'm making such a large batch, I don't want to mess it up, so I'm wondering if other people have tweaked and still had them hold together and turn out good.

I don't have an answer to your question but maybe you could answer a question for me. I made this recipe for the first time and they we pretty tasty but I wonder about a couple of things.

1. Why use parchment paper brushed with fat? For easy clean up? For browning? Another reason?

2. I mixed up the batch of salmon patties a few days before I put them in the oven. Could that be a problem?

Eggs hold everything together... you can make pretty much anything that's not too wet into patties with enough egg to glue it together! Half almond/coconut flour would be fine, but you may need to add extra egg depending on how much moisture the flour sucks up.
