Mayo fail - help!

I've made homemade mayo twice before with the immersion blender and it's come out great. Today, I went to make it and it came out runny and thin. I thought it was because I may have added too much lemon juice, so I tried making a new batch. Measured everything precisely - one egg yolk, 1 tbsp water, 1 tbsp lemon juice, 1 tsp mustard, 1 cup avocado oil, and a pinch of salt. The second batch started to come together, but when I started to lift the immersion blender out of the jar, it became watery and runny again. Help! What went wrong and is there any way to save the mayo? I saved the first batch for a salad dressing base, but I really want mayo! And now I don't have enough oil to make a third batch.

Try adding another yolk.

In the future, I would drop the water, increase the lemon juice to 2 tbsp, and use the whole egg.
