My first Whole 30 - started October 19th

Alrighty, I was looking for a spot that I could write up my day-to-day progress, without annoying my Whole 30 buddies on the other forum.  So I decided to track my progress here.  I'll probably share pictures of what I'm eating, tell how I'm feeling, and write up any general things that I'm noticing about my body as I do this.

 

I'm on Day 3, so I'll recap days 1 and 2 really quick.

 

Day 1: Made a frittata for breakfast, and used coconut oil for the first time.  Delicious!  For lunch I had mexican tuna on celery sticks as I drove to work in my car, and an apple as well.  For dinner I had a chicken breast with pan-fried potatoes (they were supposed to be roasted but the chicken took priority in the oven) and spinach.  I LOVE spinach.  I've loved steamed spinach my entire life.  I used to request it as a child when my dad asked me what veggie I wanted.  So this was a pretty easy dinner for me.

 

I felt a bit unprepared because some of the kitchen materials I had ordered hadn't come in.  So I wasn't able to do my clarified butter and my mayo ahead of time like I wanted to, and I had to spend a lot of time chopping up ingredients.

 

I also ended up getting a migraine by the end of the day.  Not sure if it was related or not; I've gotten them before.

 

 

Day 2: Had frittata leftovers, which felt a bit heavy for me.  Had a side of strawberries with it to balance it out.  Lunch was a chicken and raw spinach salad with cucumbers and grapes.  Dinner was spaghetti squash covered in meat sauce.  I had junk food cravings later that evening, so I drank some water and ended up going to bed.

 

My headache went away by mid-afternoon.  Yay!  I felt like I could think more clearly.  Also, had my first big "clean through" from all the fiber I've been eating.

 

The items I ordered arrived in the mail, so I got straight to it and made clarified butter and mayo!  Success!  I also have bone broth in a slow cooker right now.... should be ready in time for me to make my brisket tonight.

 

 

 

Day 3: Woke up feeling good.  I think I might be getting a cold, so I'm going to take some echinacea and a multivitamin.  I read the ingredients, so I know I'm in the clear!  I think part of it might be allergies, since my nose has been acting funny for the past week.

 

Breakfast was poached eggs, leftover potatoes from Dinner #1, and an apple.  I'll probably have some cucumber slices too, to get a veggie in there.

 

 

 

That's all for now... my other posts will be much shorter, I promise!

My doozy migraine was yesterday (Day 2).  Thank goodness I have been headache free today!  I have been cooking tons and tons, which is kind of unusual for me LOL  I also feel like I might be fighting something.  I wonder if we really are, or if it's just more "carb flu."  LOL

I'm a day behind you.  Did you get a chopper for your veggies? it looks like a wine bottle with a push button on the top.  chops in a flash and makes your life easier.  also a mini food processor has been handy for me, I can quickly throw in chunky veggies to add to my dishes and they come out either finely chopped or, if I want, in a puree.  Both very handy kitchen tools!

Hi e_gov!  I don't have a chopper for my veggies, but I did finally get in all the stuff I ordered, including my food processor.  I used it three times in one evening!  Very handy!  Not very helpful though if I want stuff coarsely chopped, since it makes everything very tiny/almost puree.  Still working out the logistics.

 

Day 3 was interesting... I had chipotle for lunch, all whole30 friendly items: lettuce, carnitas, guac, and salsa.  Yummy!  For dinner I had my leftover spaghetti squash and meat sauce.  Didn't get around to adding a veggie, but I'm making up for it today.  Last night was exhausting and I was starting to get frustrated/burned out on cooking.  I finished up my bone broth - jarred it, cooled it, scraped the fat off the top and stored it.  I also made breakfast sausage patties for the mornings, and prepped for tonight's brisket dinner (chopped up the veggies, salted and peppered the meat, and cut up the butternut squash to roast in the oven later).

 

Day 4 this morning I had my eggs, sausage, and grapes with a cup of black coffee (watered down... more like iced tea but with coffee flavor), and got the brisket started in the crockpot.  The kitchen is smelling good!  I'm off to go figure out lunch... most likely a chicken breast, and I have kale that I need to use up.

 

I need to find that sweet spot when it comes to cooking.   I like the bigger recipes because it leaves me with leftovers.  The downside is that the prep time takes longer. I'm hoping I can do more of my prep work this weekend which will leave my weekdays more available for other things.

 

Also, the cost of buying all of the food is something I'm adjusting too as well.  I don't earn very much (I work part time while going to school), so my fiance helps out thankfully... but sometimes other people in the house want to eat my food too, and I feel bad no sharing.  So for example, I got a dozen eggs last night and I've already gone through half.  And these are the nicer, more expensive eggs too.  I could do the cheap ones, but I don't think I'm getting enough nutrition... it's like the difference between white bread and multi-grain.  Maybe I can have them buy some of their own ingredients (e.g., eggs) and I'll make it with my stuff so they still get to enjoy my cooking without breaking my wallet...

I've made it through Day 5!!

 

Meal 1: Sausage, eggs, and a cucumber.

 

Meal 2: A recap of last night's dinner - brisket, broccoli, and butternut squash (DELICIOUS with rosemary btw!)

 

Meal 3: Homemade pesto (a great success), chicken breast, and zucchini noodles.

 

Had a rough time today. with temptation.  My fiance's mom got a box of brownies, and left it out in the middle of the table.  When I came home, I saw it sitting there... already cut into... a clump of it had fallen onto the table from when the last slice was removed.  I picked up the tin and the brownie piece... fantasized about eating eat.  Put the tin on the counter, covered it with a paper towel, and threw the brownie chunk away.  Phew!  I felt incredibly sad and frustrated that she would so blatantly leave it out when she knows I'm trying to eat well.  I wanted it so badly, but instead I made myself eat lunch and study for school.

 

I came home tonight after grocery shopping and she was in the kitchen.  I told her I "passed the brownie test," and she laughed.  Then she said that she had it with a glass of milk and it was really good... not that she was teasing me or anything.  I'm sure she meant it in good humor, but I know that she's been scoffing at my whole30 since I decided to start it.  To her, dairy and grains all have a healthy place in a diet (although I'd be curious what her excuse is for brownies!).  She's a nurse, and is always trying to dispense her "nutrition wisdom" to me (yesterday she recommended I take supplements since I'm not eating grains... not sure what she thinks I'm missing in my diet, and she didn't really get into detail about it.)  I know she means well, but it makes it a little harder for me, and I wish she'd just be more supportive and let me do this for myself.  I'm not forcing any of my foods on her, so I'd appreciate it if she'd do the same.

 

Anyway, I made it through!  Feeling very full, and brownie free.  The cravings are getting stronger for me, but I'm handling it.  Onto day 6 tomorrow!  On the upside, my fiance is very supportive.  He's been eating the dinners with me (and sometimes the breakfasts if I'm up early enough with him), and he even has been helping out with the prep work and clean up.  He's offered to go to the grocery store for me tomorrow if I give him a grocery list, which I plan to take him up on once I get my meal plan ready for next week.  Woo hoo!

I'm almost done with Day 7. I'm feeling pretty drained but I have been doing well with keeping ahead of the meal curve by eating alot of leftovers and and meat leftovers and combined with salad for the next day's lunch. Allegedly I'm at the point where I should be bursting with energy the next couple of days.

 

I'm really missing cake right about now...

Hang in there, you're doing great!  Leftovers are a great and helpful way to eat healthy without having to cook all the time.  I recall the book says Day 6 and 7 are typically the lowest energy days.  Days 8 to 9 you might experience a little bloating, but don't panic!  That' just your gut healing and figuring out how to digest healthy food.  Try not to think about what you expect to come next so you don't set yourself up for disappointment in case it doesn't.  The experience is different for everyone.

 

What helps me stay motivated is thinking how far I've come.  I'm on Day 7 right now.  That means I'm 20% done!  1/5 of the way through!  I'm not sure if you're a glass half full or half empty kind of person, but I find that that helps me. I break it down into percentages.  Every 3 days you're 10% closer to your goal!  Not too shabby!

 

And yes... I am having food cravings too.  I realized weekends are harder for me because that's usually when I'd eat out with my guy a lot. I'm missing all kinds of foods, but at the same time I've made some yummy ones too so it's not too bad.

 

If you're feeling too tired to cook, you can go to Chipotle (if you have one near you) and get the carnitas on lettuce with gaucamole and salsa.  Those are all whole30 compliant!  I did it last night because I didn't feel like cooking.

Day 6 was kind of a lazy day for me...:

 

Breakfast - eggs, brisket, butternut squash, and grapes

 

Lunch - Brisket and butternut squash

 

Dinner - Chipotle (carnitas, lettuce guac, salsa)

 

Post-dinner veggie (to make up for lunch) - red bell pepper with whole30 ranch.

 

 

Day 7:

 

Breakfast: poached eggs, sweet potato hash, an apple

 

 

I have a lot of school work to finish today and I have to prepare for next week.  I hope I have time to do it all!

 

The cravings are getting stronger.  I think it's because the "magic" of a new thing is finally wearing off, but I'm sticking with it.  My fiance has been very supportive in keeping me on track, which helps.  The family is thinking of getting pizza tonight to celebrate my brother-in-law's birthday, so I'm probably going to make a delicious shrimp dish and chop up the watermelon I have sitting on the counter.

 

I just wish I had more time in the day!
