What is your Favorite Whole 30 Meal?

Hello everyone! Day 25 for me on my 1st Whole 30. I'm picking myself off the floor after my dr visit yesterday and not seeing the results I want.  I was wondering what is your FAVORITE WHOLE 30 MEAL? Not what is easiest but really what you look forward to cooking and eating.  So far I found a tasty recipe for Zesty Chicken Bites, using almond flour/meal and seasonings.  It's so good!

I'm hoping to add some new recipes to my current rotation :)

Fish, fish, fish.  Every which way but loose.  Smoked, baked, BBQ'd, in the pan or out of the can. Fish has given me all of the results I've ever hoped for.  It's never let me down.  I'll stick with fish.  I drizzle it with all kinds of balsamic reductions.  Lemony, blueberry, raspberry, cranberry, blackberry, black cherry, chokecherry and huckleberry.

I never get tired of this and I eat it nearly every day:

I heat a handful of pre-cooked ground meat and stir in a big handful of precooked Brussels sprouts, roasted with bacon. I top that with three eggs fried in ghee. I surround it with cherry tomatoes, or lately, sliced tomatoes from my garden. Sometimes I put a big serving of guacamole on top of the whole mess. It's filling and tasty. I keep on hand either: browned ground beef with onions and mushrooms; or ground pork with sausage seasonings.

 

Yesterday, I tried out Mel Joulwan's Fried Chicken Meatballs. They do taste a lot like fried chicken. Next time, I'll use nugget-size pieces of chicken, rather than ground. (I've never met a recipe I couldn't improve :o )

Nom Nom Paleo's Sliders, with just about any ground meat.  Bison and chicken are both good, and beef is the base of the recipe.  There's a decent amount of prep involved, so I batch them, cook them all, refrigerate some and freeze the rest.

 

There are also many compliant recipes for creole fish stew out there, and it's so easy to get the veggie/protein/fat targets right in a stew.

New favorite is Paleo Mu Shu Pork/Chicken/Steak whatever --- basically has bamboo shoots, egg, mushrooms, thinly sliced cabbage, ginger, ACV, coconut aminos.

 

Whole 30 Buffalo wings made with Franks original hot sauce and ghee, with a lot of veggies on the side {my favorite is oven baked asparagus}

Rebe_J: Where is this fried chicken meatballs recipe of which you speak? I've looked online and in the Well Fed cookbooks, and can't find it. I must make it now.

Nom nom paleo's Asian meatballs, with well fed's hoisin sauce, over wither cauliflower rice or sweet potato noodles. All these components can be made ahead, which makes it quick to throw together on a busy night.

I should really go make some right now...

I think my favorite meal that my spouse and I have concocted so far has been sweet potato cakes/latkes (basically shredded sweet potato and green onion held together with a little bit of egg and flaked coconut and pan fried) covered with pulled pork (either homemade or the compliant Smoked Pulled Pork version from Costco, we've done both). A little hot sauce or Tessemae's southwest ranch dressing on top, and a side of salad (I made a spicy cucumber salad) plus a blob of guacamole and you have a nice meal. It feels so luxurious and complete as a meal, like it would be hard to come up with a non-compliant thing to add even if you tried.

If I had to pick one favorite, it would be roasted spaghetti squash then sauteed with lots of garlic, broccoli or spinach, maybe some mushrooms and onions if I have them, topped with lots of delicious tomato sauce. Serve in a big bowl. I love, love love this.

 

Salmon Cakes from Well Fed and/or It Starts With Food is a close second.
