abril Posted September 18, 2012 Share Posted September 18, 2012 I almost always do summer squash (yellow or patty pan - less watery than zucchini), mushroom, and ground pork (I add breakfast or italian seasoning). Our garden is slowing way down producing summer squash, so I may try spaghetti squash as a substitute. I once made a delicious egg casserole w/ thinly sliced and roasted eggplant, mushrooms, and moussaka spiced ground lamb. I just got more ground lamb, so that one is on the menu next week.
