4windsrider 78 Posted November 10, 2015 Share Posted November 10, 2015 I just tried Chef Richard's Roasted Tomatoes recipe….just got a mess of sort of "stewed" tomatoes…can't call them roasted…any ideas on what I may have done wrong ?? Link to post Share on other sites

When you're roasting vegetables (especially quite wet ones) they need space around them... otherwise they start to condensate and then they steam themselves. Same goes for sauteeing things, especially mushrooms. If you crowd the pan, they get soggy and sad... if you give them enough room, they brown up nicely... Link to post Share on other sites
