Can't say for sure, but my first question would be did you crowd the pan? When you're roasting vegetables (especially quite wet ones) they need space around them... otherwise they start to condensate and then they steam themselves. Same goes for sauteeing things, especially mushrooms. If you crowd the pan, they get soggy and sad... if you give them enough room, they brown up nicely...
