Read the ingredients list, and if all the ingredients are compliant, then it's fine. Make sure you read the whole ingredients list, I doubt seriously you've found one that only contains almonds, as they generally have to also contain water, and most -- even the compliant ones -- will contain other stuff too. I'm on Day 1 today, and as I was making my first batch of ranch dressing with the mayo I made last night, and adding the coconut cream to the mix, I licked some off my finger that came out of the can. Then an ingredient caught my eye that made me question whether or not I should have done that... and it turns out that all of the coconut milk I bought yesterday has potassium metabisulfite in it. And I already mixed in the entire jar of mayo that I made.... and I licked that bit off my finger. So this means that I have to reset, and tomorrow is Day 1, right? I'm so disappointed. Quick edit: I just want to note that the "can" I'm referring to is a Goya Coconut Milk, and it contains coconut milk, water, and potassium metabisulfite "as a preservative."
