Vegetable quantities

Ok, so really, don't laugh.  I cook one onion (a little smaller than my fist) and 1 16oz bag of frozen spinach.  That is 1-1.5 servings for me.  Am I taking the "you can't overdo veggies" too far?  This go around I'm *really* trying to get better fat adapted because I'm often hungry between meals.  So I'm adding more fat which makes me feel like I should try to cut carbs (and so far I am).  I'm trying to go lower carb in the AM and save my potato, squash, etc for at night to help me sleep.  These are the veggies that I'm eating a TON of:

 

spinach

broccoli

cauliflower

brussel sprouts

zucchini

 

I may add pumpkin to the mix because I'd like to make a pumpkin soup so 1 15 oz can of pumpkin would be 2 servings by the time it turned into soup with some onions and broth + seasonings.  

 

So really, am I the only one who considers a 16oz bag of frozen cauliflower to be a "side dish" by the time its mashed with a little broth and ghee and turned into mashed cauliflower?

Consider volume with this, and how much of it is water. Spinach cooks down into nothing. A pound of frozen spinach will squish down into a handful if you press out the water. I'd say as long as your digestion handles it, you're not doing anything wrong. I can personally eat multiple good-sized zucchini in a sitting if my protein serving is a bit on the smaller end of the range.

Like berry bird said, if your digestion seems fine, go for it! I can easily eat that many veggies, if not more, in a sitting and be totally fine. I love it, and my body loves it! My husband and I go through a box of fruit and veggies each week that is meant for a family of five... and we still buy some extras... :P

I frequently consume standard dinner plates of food that are piled two inches deep in cooked veggies and meat. Now I am a 6'2" man with a fast metabolism who often exercises nearly an hour per day, but I seriously don't worry about anyone eating too many veggies. 

 

Disclaimer: My functional medicine doctor has set me up for a test of the adequacy of my stomach acid. There is a chance that I am not digesting my food fully and have been coping by eating a lot.
