Not sure if I'm portioning my fats correctly

Okay, so I've seen the template. I know the portions you should have of oil, avocado, nuts, etc... but does naturally really fatty meat count as my fat? Does bacon count as protein and fat? If i cook my meat in fat, is that all of my fat for that meal?

This boils down to experimentation.

You want to build meals of protein, veg and fat that satiate you for 4-5 hours.  If you're hungry sooner than that, bump up the portions.  If your meals are keeping you satiated longer than that, scale back.

Bacon is more of a fat vs. a protein on a Whole30.

When you saute, much of the cooking fat stays behind in the pan.  As such, you may need to add fat after cooking to compensate.
