missmunchie
I have two Costco-sized bags of frozen berries taking up precious room in my freezer that I'm trying to figure out what to do with. All of my usual berry consumption methods are either smoothies or SWYPO. Any compliant recipes or ideas?
Moderators ShannonM816 Posted January 1, 2016 Moderators Share Posted January 1, 2016 Drop two or three in some sparkling water for something different to drink. Have a little dish of fruit with some coconut flakes or coconut milk alongside a meal. SB&J Burgers (she uses fresh strawberries, but I'm pretty sure frozen would work). Administrators ladyshanny Posted January 1, 2016 Administrators Share Posted January 1, 2016 Maybe look up some different "fruit relishes" you could do with them? Ie, cook them down with ginger and lemon or lime juice and use them as a condiment for pork chops or chicken breast?
missmunchie
Thank you for the ideas! I didn't think about just putting berries in my water, ShannonM816, that's brilliant! I used lemon slices all the time so this'll be fun. Fruit and coconut milk/cream is a little SWYPO for my goals, but maybe the family will like it. SB&J burger ... that's insane! Must try it, my husband will think I'm nuts (more so than usual). ladyshanny, that was my first thought but I'm a sad panda at knowing how to pair foods. But I just stumbled on the seared scallops with blueberry sauce in the Whole30 book, so I can use that as a start.
