I read, i decided, and I committed. Whole 30. I can do anything for 30 days, right?? My fiance is on board... Even better.  My 4 kids.... not thrilled but they love veggies and meat and I will make other sides for them too.

 

So day one...

37 years old,

5'10"

255.6 ( When did that happen?)

First day back to work after 2 weeks off

First day back to school after 2 weeks off. (Last Semester!)

 

Prepped breakfast and lunch for the week on Sunday

Eggs, apples, natural peanut butter for Breakfast

Mason Jar salads for lunch

 

Rotating chicken, beef, and fish all week for dinner, sides of veggies. LOTS of Veggies

 

 

 

ON day one, I felt hungry all day. Maybe Psychological. I drank a lot of water, ate my food and managed to stay away from sugar all day.  I traded my coffee creamer for canned coconut milk. It wasnt that bad at all. 

 

What I am doing different tomorrow?? I bought raw nuts to eat for snack and will also pack a couple extra apples, just to be safe. 

 

Day one is done- 29 to go!

Day 2

Aside from having pneumonia, I am feeling pretty good. No cheats. and not really craving if I stay on top of my hunger.

 

Breakfast was eggs, apples, peanut butter

Lunch Mason Jar salad with chicken and chopped veggies

Snack, Orange

Dinner fish tacos, lettuce leaves instead of tortillas and lots of avocado, cilantro, and tomatoes. 

 

28 days to go!

I keep saying the same thing...November and December flew by, right?  So January should too?

 

 

I love fish tacos, I'm stealing this idea.  I'd like to know your mason jar salad recipe if you are up for sharing.

 I started the mason jar salads and these have beengreat. I made 6 salads on sunday, which gave us enough to last until wednesday. ( my fiance and I are both on plan, so we go through 2 a day) Even on day 3, the salad was crisp and delicious.

These are layered with the wet ingredients first.

I started with dressing. ( use whatever you like for your taste) Put in bottom of quart jar

then I added grilled chicken, cucumbers, celery, tomatoes, avocado, green onions, and lastly spring mix. Seal it up and put in fridge. I think people eat these in the jar, but they are pretty packed so I shake them to get the dressing on everything, then dump onto a plate. 

 

Tonight, I made jars for tomorrow. I used shrimp, avocado, cucumber, tomatoes, celery, green onions, cilantro. I made my own dressing using lime juice, garlic infused grape seed oil, herb infused olive oil, and salt.

Day 3, Super sick and taking lots of meds. Steriods are increasing my appetite. UGH!

 

Same breakfast and lunch as previous 2 days, and made pot roast with carrots, celery, and onions. It was yummy. I had raw nuts for a snack, because not snacking is not an option. 

 

On day 3, I feel less bloated. I dont know if I lost weight or not, but the bloat seems to be going down.  My Fiance says it is weird that he is not going #2 as often, and my guess is because he is eating quality foods and there is not as much waste. 

 

We are doing great with coconut milk in our coffee.  He just told me he doesnt even want to go back to the coffee creamer we normally bought. He does not plan on being dairy free at the end of the 30 days, but I do, so I think he will switch to milk or cream and I will stick with coconut milk. 

 

27 days to go! 

 

Tomorrow we pick up 2 foreign exchange students, who will be with us for 4 weeks. This will present new challenges, but I am determined.

Hi inkedprincess - how're you doing? Hope you're feeling a bit better....

You look like you're doing great, but I think you'd do A WHOLE LOT BETTER if you made your breakfast to match the recommended meal template - it would do away with the hunger & really help to curb the need for snacking.

We'd recommend 1-2 palms of protein, 1-3 cups of veg (with 3 being optimum) and a generous serving of fat. Fruit shouldn't ever push the veg off of your plate. So with your breakfast you're seriously lacking vegetables, and if you're having any less than 3 eggs (4 for your fiance) you are short changing yourself. Eggs, when they are the only source of protein in a meal should be the number of whole eggs you can hold in one hand - that's 3-4 for most females... Nut butter is fine when eaten in moderation, but there are LOTS of superior fat choices.

I'm not saying you're doing it wrong - just trying to help you get the most out of your 30 days - and since the food we eat has a cumulative effect on our bodies I think you'll soon start to feel like you're constantly playing catch up... and you will be.

Hello! In case you didn't know, peanut butter isn't whole 30 approved because peanuts are legumes which aren't allowed.  Nut butters like cashew and almond are approved though! I'm a newbie too and just passing along what I've read. Your mason jar salad looks REALLY good! I've been staying away from coffee, but you've inspired me to try coconut milk. I have a couple cans that I was going to use for curry chicken when I felt up to it, but sounds like I'll be breaking into it sooner!

Yep, unfortunately legumes are a known gut disruptor and off limits for your Whole30 - any other kind of nut butter is okay.
