creativenikki Posted January 7, 2016 Share Posted January 7, 2016 I'm looking for easy meals that I can make for a group of non-paleo friends and family. Things that can be prepped in advance are ideal because I have a 3 month old baby and rarely can use both hands at once. Make sure you have plenty of lettuce for taco salads or wraps, people doing low fat diets may also want to go that route rather than taco shells. You could also do meatballs, there are all kinds of ways to season those. These salmon cakes are good, and easily made ahead as well. Pair them with coleslaw (I can't find the recipe I've used before, but this one looks good), which actually benefits from sitting at least overnight in the fridge for the flavors to meld. Add maybe some sweet potato fries, you've got a meal. Baked potato/sweet potato bar -- make up a crockpot roast or something like kalua pork or even taco meat to stuff them with, have cheese and sour cream and chives for more traditional topping choices. You can use this recipe in a crockpot or a dutch oven. For assembling, I like to have purple cabbage cups, romaine boats, and all the toppings - black olives, pico de gallo, sliced jalapenos, lime wedges, thinly sliced radishes are good. http://simplymrsedwards.com/2015/06/28/whole30-pulled-pork-carnitas-recipe/ If you need an appetizer, I like the recipe for "dump ranch" (it's on a million sites) served with veggies, or guacamole with veggies & plantain chips. I often add more coconut milk if I don't have chicken broth. Sausage is tops in this but cut up Applegate Farms or Aidell's chicken apple sausages are great too.
