I found Purnell's Old Folks Italian Sausage, which lists the following ingredients: Pork, (Including Ham, Lion, and Tenderloin), Water, Salt, Flavorings, Fennel Seed, Extractive of Paprika. Yes, the "flavorings" is a question- can I have this? More importantly, people keep saying "I make my own sausage...." What sausage do you buy to begin "making your own"? So confused. Start with a pork sirloin roast and add some compliant bacon (because of the leaner cut of pork), seasonings like fennel, basil, garlic, red pepper flakes, black pepper and most folks like sage in their sausage but the seasonings are up to you. You can make sausage with ground meat... it's not a cured sausage but... more like a breakfast sausage... think those Johnsonville sausage patties. Ground pork, whatever seasonings you like (google is your friend here and also www.meljoulwan.com) and then make into thin patties (like a skinny burger) and pan fry or bake. voila! misc_tara Posted January 13, 2016 Share Posted January 13, 2016 I buy packages of ground pork and just check to make sure the only ingredients are pork and salt (it should look like what you would expect sausage to). The only ground pork I've found in my local grocery store (even fresh) has added sugar so I'll probably stick with the one I listed. I might take your advice on the seasonings, though. Thanks! Caseymc Posted January 16, 2016 Share Posted January 16, 2016 I'm in VA, and have actually found a lot of compliant sausage - especially Chorizo and Italian sausage (and even a breakfast sausage). Look for farmers markets and farm stores in your area. Aidells, Applegate and Brat Hans (more widely available) also have compliant favors. Hope that helps.
