cccarmichael
Hi! I'm looking for a legal recipe to make mashed cauliflower. I found one that used almond milk so I know that's not allowed. Does anyone have a recipe that is yummy and is within the Whole30 standards?
Moderators ShannonM816 Posted February 11, 2016 Moderators Share Posted February 11, 2016 Almond milk is okay, as long as it doesn't have any off plan ingredients in it. You can make your own, if you can't find any at the store. For a different recipe, try this one. There are several links in my signature, to things like the Whole30 rules and Can I Have list and the meal template -- if you haven't already, you might want to check them out and be sure you know what Whole30 really is, there are some misleading things out there on other sites. newwhole30er
Use coconut milk instead of the almond milk.
ArtFossil
Add some garlic and some chicken broth and mix with a stick blender. Done. Serve with some clarified butter if you want to be decadent.

I'm looking for a legal recipe to make mashed cauliflower. I found one that used almond milk so I know that's not allowed. Does anyone have a recipe that is yummy and is within the Whole30 standards? Thanks for your suggestions. I have the Whole30 book so I have access to what is legal and not legal. While my husband is eating mashed potatoes, I will be eating yummy mashed cauliflower. I do have Ghee and love it so I will be able to make my dish even yummier!
smucky
I just food processor cooked cauli with a large blob of ghee - no extra liquid required.
praxisproject
Just in case you're not aware, you can have white potatoes too, as per the updated rules: http://whole30.com/2014/07/new-whole30/ I quite like cauliflower and other veggies with just a bit of duck fat. newwhole30er
I'm out of coconut milk and just made mashed cauliflower with 3 heads of cauliflower, 1 head of roasted garlic, 2 big spoonfuls of coconut oil, and salt + pepper. Came out great! I actually think I like it better with the thicker texture.
KathyV
I have also put celery root in my mashed cauliflower just to change it up. Parsnip would be good as well. I use very little milk and more Ghee, coconut oil or Duck fat.
praxisproject
Just a note for those on Whole30, dairy milk is not compliant.
