K.C.
K.C. Yesterday I went to a poultry 101 cooking class. They fried potatoes in the duck fat for home made french fries. It was only raw potatoes, salt and duck fat. Allowed? If not, what is the rational since both potatoes and duck is allowed?

Mrs.Mathias
I went out to brunch with my husband yesterday, and was thrilled to find out that they cook their Lyonnaise potatoes in duck fat. I had poached eggs with the potatoes and duck confit.
