My First Whole30!!!

I was introduced to the program by a co-worker...it sounded intriguing so I ordered the book. After a few months of thought, reading, & talking myself into this I am committed to my 30 days & excited to see what happens! Life is hectic (single mom) & I'm concerned about my ability to meal prep but going to try to get it done.

 

Goals:  My primary goal is to get back to a healthier me... a recent weight gain...20lbs over my normal has landed me into a new diagnosis of hypertension. :(   And I'm sooooo not happy about it!

Somewhere along the way in the past 2 stressful years I lost my healthier habits & picked up some not so good ones but I'm determined to find my way back into the most of the clothes in my closet & a happier place! I like the idea of a nutritional reset... I'm patiently waiting.

Meal 1:  Veggie frittata... spinach, yellow/orange peppers, & ground pork. Delicious :) strawberries @0730

Meal 2: spinach argula salad w/peppers, hard boiled egg, & homemade balsamic dressing.

Snack: apple/almonds/pistachio's  (lunchtime is unpredictable, I'm a nurse, never same time daily!) Maybe need to increase bkft bc I was hungry w/beginning headache by 1230p! And hungry by quitting time as well....the snack was a lifesaver!

Dinner: On the run...meeting at the boys school. Chili lol..again!! but I love it... banana w/almond butter, & one dried Mango slice.  Stayed up to late...reading..I'm currently in middle of Game of Thrones. Cant seem to put it down! Something caused some stomach distress..ugh! .. or maybe just the leftovers from Skyline chili dogs bf whole30 start!

Overslept...restless night! Not to many hours  but self induced, Thank you Game of Thrones!

Meal 1: Veggie frittata w/green grapes. Ate half at 0720 & second half at 0920.

Meal 2: spinach/argula salad w/onions, peppers, raisins, & balsamic drsg. Grilled pork loin, boneless, w/lemon cauliflower..so yummy! 1100....Had to do lunch early today...wondering how my afternoon will be?? Saved apple & egg for potential afternoon hunger... won't be home till 6p or later.

Well not as bad as I thought it may be... still bumping along... had my first dining out experience. Bkft at First Watch...after a bit of discussion with waitress I managed to get a veggie omelet cooked in olive oil an fruit bowl. But they did mess me up...while eating my first bite I realized they forgot to hold cheese...I sent it back but had one bite w/cheese in it! :(

In terms of cravings.. no biggies so far. Did have headache on day Friday but probably partial stress induced as well. We managed a great dinner for day 4...kale/spinach/argula salad w/host of fresh veggies, steak kabobs w/veggies & pineapple grilled & roasted parsnips & potatoes... so delicious!!!
