Jhmcinnis Posted April 6, 2016 Share Posted April 6, 2016 I love roasted veg at dinner, but with a newborn it's sometimes hard to get it done! I see people making them ahead of time... Just curious how they hold up in the fridge for a couple days? Any tips for storage and reheating, or is it just Tupperware and microwaves! I batch cook for the week and will do an entire week's worth of roasted veg for sometimes breakfast, lunch, and dinner if I know I'm busy. Link to comment Share on other sites More sharing options...
Moderators SugarcubeOD Posted April 6, 2016 Moderators Share Posted April 6, 2016 Agreed, my roasted veg stands up fine, altho to be fair, I rarely reheat it... mostly just eat it cold or room temp... if you're going to reheat, you might want to slightly undercook whatever it is you're roasting.
