Best version of reintroduction foods

It's probably best to reintroduce the version you're most likely to have, so if others in your household always have a particular type, or you prefer one over the others, use that.

Other than that, I personally would choose the least processed, least extra ingredients versions. For dairy, I would opt for organic full fat versions. Google whole30 dairy manifesto if you want to read more about that. For peanut butter I choose versions with no added sweeteners. For dairy reintroduction day, if you're going to have ice cream, be sure you choose one with no grains and no soy or carrageenan just to keep the reintroductions clean. But really, after your whole30, you get to decide for yourself what's important to you.
