Snappy Shark Posted October 2, 2012 Share Posted October 2, 2012 It's delicious! Use it in recipes as a cooking fat - swap it out for a high-temp oil such as coconut oil or ghee. I recently rendered my own lard from a fatback from my parents' pork share, and it has surpassed ghee as my new favorite thing. What I've been doing lately is melting it in a pan and then sauteing green cabbage in it until it gets slightly brown and crispy. Top with salt and pepper - DONE. I have this for breakfast in the morning with my eggs and it just knocks my socks off. As long as you're sure it's from a happy, pastured animal - buy some and go crazy! Enjoy.
