I'm still working through "existing" food in my 'fridge and pantry that's Whole 30 compliant, so today's meals aren't exactly inspired... but they got the job done, it's 9:40 on the "left coast" and I'm not reaching for the popcorn... Breakfast: 2 eggs scrambled in olive oil with sauteed zucchini, onion, and avocado. A handful of farm fresh cherries. Lunch: 1 can of tuna mixed with homemade (olive oil based) mayonnaise, cucumber, red onion, cilantro and avocado, and another handful of cherries. Dinner: ground beef burger patty (seasoned with truffle salt), 2 zucchini sauteed in olive oil, a cup of leftover Whole Foods asparagus and portabello mushroom salad (I checked the ingredient list and it's compliant). AngelEyz Posted May 18, 2016 Author Share Posted May 18, 2016 Day 2... a bit of a low grade headache at the start of the day, but manageable with a bit of extra water between breakfast and lunch. My meals for today... Breakfast: 3 eggs scrambled in olive oil with sauteed zucchini, onion and avocado. A handful of cherries. Lunch: about 5 ounces ground beef burger patty (seasoned with salt and pepper), a cup of leftover WF asparagus/mushroom salad, and about a quarter cup of garlic dill saurkraut. Dinner: Michelle Tam's Garbage Stir Fry with Curried Cabbage -- I made it with ground turkey and found it surprisingly tasty. Sliced tomatoes. Can't wait. :/ Breakfast: a very tasty Breakfast Pumpkin Custard - light but satisfying and filling, with just a *touch* of sweetness from the bananas. A definite repeater... next time, more cinnamon and perhaps some nutmeg Lunch: leftover Garbage Stir Fry topped with a fried egg and paired with tomato/cucumber salad Dinner: Baked Salmon with Avocado Salsa -- another keeper, next time I'll add roasted jalapeno to the salsa for a little kick. Breakfast: another serving of Breakfast Pumpkin Custard Lunch (on the go, at the local fairgrounds attending a dog show): the last of the Garbage Stir Fry with Curried Cabbage topped with a fried egg Snack: an ounce of raw almonds and a handful of cherries Dinner: a new recipe to me, The Kitchn's Southwestern Spiced Pork Tenderloin, paired with homemade coleslaw (cabbage, homemade mayo and apple cider vinegar) and a hasselback baked potato Link to comment Share on other sites More sharing options...
