Kate LeKites Posted October 4, 2012 Share Posted October 4, 2012 I'm noticing quite a bit that paleo recipes don't specifically say that you should drain meat after cooking it and before adding other ingredients. First I thought it was because it's just a given to drain the fat, but I started to wonder if I'm supposed to keep it in? I am not yet using grass-fed organic meats, so I feel I should drain the fat to eliminate some of the toxin load. Should I be replacing it with a healthy fat? Renee Lee Posted October 4, 2012 Share Posted October 4, 2012 It depends. You're right that the recommendations to drain fat are generally because of the fat soluble toxins in conventional meats. If you're eating grass fed, you usually don't have to to drain the fat, and if you do...SAVE IT. Sometimes, though, the "drain the fat" instruction has nothing to do with toxin load, or fat content. Rather, it's a consistency thing. When I make sloppy joes (huh...without the bun, it's really just sauced/seasoned hamburger, isn't it? anyway...), if I don't drain the fat...it's going to be WAY too liquidy/slimy.
