I've gained 20 pounds since November.  Lost quite a bit before with Whole 30.  I'm preparing my pantry to begin again and saw your article about your new fat partner.  Using animal fat vs. coconut oil kind of scares me.  Recent cholesterol significantly increased to over 300 after being down in 180's; A1c and everything else quite elevated as well.  Comments about the animal fat issue would be appreciated.
