Mammamets
I am on day six of my whole 30. I'm really loving it but the one thing that I am starting to get really irritated with pretty much has nothing to do with the way of eating, and all to do with my cooking skill. It seems to me that ever since I started to use ghee to cook my eggs (or olive oil) that it is impossible for me to cook an egg that doesn't stick to the pan. I love love love slick over medium eggs. I've always been really good at cooking them, and in the past I've just used regular butter, or a nonstick pan. I don't want to go back to using either one. If anyone has any cooking tips on this it is much appreciated. Thanks !
Moderators LadyM Posted June 7, 2016 Moderators Share Posted June 7, 2016 Try lowering the heat and adding more fat. That should do the trick.
praxisproject
Some pans are also designed to work with fat or with no fat at all, so switching pans can sometimes make a big difference.
Moderators Tom Denham Posted June 7, 2016 Moderators Share Posted June 7, 2016 I fry eggs Spanish style in olive oil and have good results in an ordinary skillet. I use medium heat.
Kbart64
A line I always remembered from an old cooking show with Justin Wilson...."Hot Pan, Cold Oil.. food wont stick!"... then he would toss in a "I Garrrr-un-teeee"!!!!! I have discovered for the most part he was correct!!

Moderators ShannonM816 Posted June 15, 2016 Moderators Share Posted June 15, 2016 Update: coconut oil spray- NO STICK! Woo hoo:) Double check your spray -- many contain soy lecithin. It is possible to find some that doesn't, so yours may not, but be sure you've checked.
Chachers04
Poached! Easy, no stick, tastes and feels like an over easy egg
ArtFossil
I've cooked a million eggs in clarified butter (ghee). Never had one stick. Ditto olive oil.
Mistyfire
I use a method from America's Test Kitchen: pre-heat the pan on low for a few minutes, add a little oil and turn the heat up to medium, when hot add the ghee and then the egg. The two oil method has helped me with the sticking and gives that buttery taste I like.
NoMoreCrunchyCravings
I use lots and lots of coconut oil in my nonstick pan over medium flame and never have a problem with my eggs sticking. But I did have trouble with ghee. And I always have trouble with our old amazing set of Farberware pans. I just can't use them for eggs, unless poaching or boiling.
