(I apologize if I missed a discussion on this.) Found a new coconut aminos at the store today - Big Tree Farms Coco Aminos. Released about a month ago according to the press release. The ingredients are "organic coconut flower blossom nectar, Balinese sea salt". I understand from reading on both the manufacturer's and Coconut Secret's websites that sap & nectar of the coconut tree are different words for the same thing. It was brought to my attention that Coconut Secret ferments their "sap" to make aminos. The Big Tree Farms website specifically says they do not ferment their Coco Aminos. Therefore, I'm thinking this product is non-compliant because there is no fermenting process to reduce the sugar content. Does that sound right? Thanks for verifying! I'm actually in reintro so I'm going to try it tonight, see how it tastes. Just didn't want to suggest it to my whole30 friends until I knew its compliance.
