If you suffer from heartburn/reflux, eating and then laying down flat can make that worse. Sunbutter is okay as long as all the ingredients in it are okay -- I have trouble finding it without added sugar. If you're hungry between meals and your meals aren't keeping you satisfied for 4-5 hours, you may need to have bigger meals. If you want to make sure you're on the right track as far as the size/composition of your meals, if you can list a day or two of what you've eaten, including portion sizes as they relate to the meal template (linked in my signature below), water intake, and exercise, we can let you know if you're on the right track or if there are things you might want to change.
