Could I Be Missing Something?

So far, I have reintroduced dairy (sour cream, cheese, ice cream) & non-gluten grains (only rice, still want to do corn by itself) with no obvious issues. No stomach/digestive distress, headaches, or bloating - are there more subtle cues for problematic foods that I could be missing? Still have legumes & don't plan on gluten anytime soon as I already know I get bloated & feel blah. Still slowly losing weight & feeling great so I'm worried about overlooking something & undoing all my hard work resetting my system & healing my gut. Any advice?

It's possible that you will experience a reaction based on quantity of a particular item and that you haven't had enough of that particular item to create a reaction yet, but if you're introducing in the manner in which you plan to consume the food (cream in your coffee on weekends only for instance) then you're probably okay. However, if you plan on drinking cream in your coffee twice a day every day of the week but only introduced it for a short time in one or two servings, you may not have experienced the same reaction you will have when you consume more.

It's also possible that you personally do not have reactions to these items but do have a reaction to gluten, whereas someone else might be fine with gluten but have drastic reactions to other things. That's why this is such a personal journey. It's however, not possible for us to say whether there are reactions going on in your system that you're not aware of.

Dairy in particular seem to have a creeping effect, and often it's not until you remove it again that you notice that it was perhaps effecting your sleep for instance. I know that for me I'm completely fine with dairy every now & then (when I deem the food/occasion worth it) but if I include it every day I get a build up catarrh at the back of my throat, I get a cough/have to clear my throat after I eat, and I have more nasal congestion - nothing digestive related, but all symptoms caused by dairy nonetheless.
