Something new for dinner

I decided to play around tonight and created what ended up being a delicious meal!



My recipe for tonight's dinner:


1 pkg Bilinski's apple chicken sausage, sliced into small rounds

1/3 cup diced onion (I used shallots)

4 small granny smith apples, chopped into bite sized pieces

3 cups kale (stems removed)

2 tsp coconut oil

1/3 cup unsweetened coconut flakes

1/2 lemon


Melt the coconut oil in a pan (medium heat), saute diced onion with cut up chicken sausage until it's browned on both sides.  Add apples & coconut flakes, let them cook with the other ingredients for approximately 5 minutes.  Add the kale, squeeze the lemon over the top of it and cover.  Cook covered for 5 minutes.  Stir all ingredients, cover, then cook another 2 minutes.



I put this over coconut cauliflower rice.  

I bought Trader Joe's already prepped cauliflower rice, so it made this part super easy!  I put about 2 tsps. of coconut oil in the pan, poured half the bag into a pan along with a handful of unsweetened coconut flakes.  I let it cook for maybe 7-8 minutes.


Soo good!!!
